Modern Western countries waste up to half of their food supplies. From the farm to the fork, food is haemorrhaged at every link in the supply chain. Farmers dispose of crops that are cosmetically imperfect, fishing vessels throw perfectly edible fish overboard, supermarkets and manufacturers send millions of tonnes of food to landfill every year, and consumers tip up to a quarter of the food they buy into the bin. Tragic though this may seem, it’s also a great opportunity because it means that we can relieve pressure on the environment and global food supplies by doing something so simple as eating and enjoying food rather than throwing it away.
