Every single plate has to be inspected by Marcus before it is allowed through and put before the customer. Now I’m finally let loose to plate a whole Dorset crab dish on my own, not just chestnuts, but all nine ingredients, for a real paying customer.
-I think, we’ll start again..
-Is that enough?
-Yeah.. First you’re gonna go here, and the crab up there. For the second try, you’re alright. So, a piece of pear here, two pieces of chargrilled potato bread there, chestnuts which you know by now, get a little pepper on the top..
-How do i call for service?
Service!
Only one last hurdle. The head chef inspects the plate.
-No way. No chance!
Jimmy, put that shit in the bin.
-Bollocks to that, I’m not putting that in the bin (tastes) This is faultless, there nothing wrong with this!
What is wrong with this?
-This is what’s wrong, this is way too much pepper for me.
-So this is a one star dish?
-No, this is a three star dish, you just did it wrong.
